DEVELOPMENT OF NUTRI MIX FLOUR AND ITS SUBSTITUTION IN REFINED WHEAT FLOUR FOOD PREPARATION

ABSTRACT New product development is a gamble as very few new product survive in the first year. The process of development testing & implementing. It is an art which one can Master with a little imagination & creative thinking. The present study was conducted on development & evaluation of nutrimixed based product. The whole study was conducted in food laboratory of GDM (PG) College Modinagar Distt. Ghaziabad and the Evaluation was done by a group of Pannel member. The nutrimix fortified food product were developed which were rich in protein, calcium, iron, mineral by incorporating nutrimix. Nutritive value and tabulated cost of the product was calculated. Method used for evaluating the recipes were Hedonic scale techniques. All the sample were acceptable by the panel member.
